Food safety

We take food safety seriously in every step of our production, from sourcing to packaging, and continuously review our routines to keep them up to date.

Some dishes are served raw or cured rather than cooked — Laksetartar (salmon tartare), Ceviche and Biff tartar (beef tartare). The raw ingredients for these dishes undergo mandatory treatment to control parasites (such as Anisakis), in line with applicable EU regulations, before serving.
